This was a much better & creamier quiche than the last one I posted, so I figured I would post it too!
Ingredients:
- 2 tablespoons butter
- 1/2 onion, minced
- 1 tsp. minced garlic
- 2 cups chopped broccoli
- 1/2 cup brown rice
- 1 1/2 cups shredded cheddar cheese
- 4 eggs
- 3/4 cups milk
- 3/4 cups heavy cream
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tbsp. butter, melted
Directions:
- Preheat oven to 350*
- Prepare 1/2 cup brown rice as package states & form into bottom of pie dish.
- Melt 2 tablespoons butter in saute pan over medium high heat.
- Saute broccoli, garlic & onion.
- Layer on top of rice.
- Layer with shredded cheddar.
- Combine eggs, milk, cream, melted butter and salt & pepper in a bowl.
- Pour on top of shredded cheese.
- Bake at 350* until firm (about 45 minutes)
