More Veggie Pasta Salad

This is the other recipe that Mom & I made on Friday night for the family dinner we had on Saturday! This is adapted from Runner’s World.


Ingredients (there are a lot!):
FOR THE PASTA:
  • 12 ounce box Garden Delight Radiatore 
  • 1 zucchini 
  • 1 yellow squash 
  • 1/2 pound carrots 
  • 1/2 red onion 
  • 1/2 English cucumber 
  • 1 pint grape tomatos 
  • 1 bunch asparagus 
  • 1 stalk broccoli 
FOR THE DRESSING:
  • 4.5 tbsp. olive oil 
  • 4.5 tbsp. red wine vinegar 
  • 1.5 tbsp lime juice 
  • 1.5 tbsp splenda 
  • 1 clove garlic, mined 
  • Salt & pepper to taste 


Directions:
  1. Chop all the vegetables into bite size pieces & boil all except the tomato, cucumber and onion for 2 minutes. SAVE THE WATER! 
  2. Boil the pasta in the saved water. 
  3. Add all the dressing ingredients to a food processor and mix. 
  4. Combine pasta, vegetables & dressing. 
  5. Once cooled add tomatoes, cucumber & onion!
