Little Bit O' Everything Salad {Lunch for the Week}



I went shopping yesterday and got a bunch of fresh fruit & veggies and decided that my lunch for this week would be a fresh salad with wild-caught sockeye salmon!
I started with a bed of baby spinach and added:
1/4 green bell pepper, diced
1/4 red bell pepper, diced
1/4 tomato, diced
1/4 avocado, diced
3 white mushrooms, diced
10 blueberries
3 strawberries, quartered
3oz. pan seared sockeye salmon, skin removed (salted & peppered to taste)
1 tbsp. Kraft Lite Raspberry Vinaigrette
So so so tasty & incredibly healthy to boot!
